Cristina Ferrare’s Big Bowl of Love – Cat’s in the Kitchen with Iron Chef Cat Cora : Potato Plate, Asian Salmon Meatloaf, Affogato

 

Big Bowl of Love’s Cristina Ferrare pulled out all the stops by bringing in Iron Chef Cat Cora to mix it up in today’s episode. CF inspired us with her potato plate allowing us all to wonder how else can we use this fun, new recipe. Perfect episode to show gourmet made so simple!

One of my favorite episodes because I LOVE Cat Cora from Iron Chef. For one of the first time, I was able to watch Cat in what felt like slow motion. She is usually always jamming when she cooks. Cat mentioned how Julia Child had been a mentor to her…and I wondered how many young viewers had no idea who Julia Child was. She truly was an icon in the cooking world. As for the show…CF names her appliances. Too funny. We met Richard the food processor. Meatloaf out of salmon? Not sure I am willing to go that far, not even for Cat!

Now for a few BBOL tips:

  • Put your sliced potatoes on paper towels to pat dry to help remove water.
  • When buying your potatoes, try to select some that are round and about the same size.
  • Try this potato plate recipe as a gyro wrap!
  • Don’t over do the crème fresh. A thin layer is all you need.
  • Don’t forget to remove most of the gray part on the salmon. It just doesn’t taste as good.
  • Use low sodium soy sauce. You still get the good flavor and it is a lot healthier.
  • Be sure to taste the wasabi mixture as you go…you can always add more to make it hot, but ou can’t take it out!
  • To get the most out of your vanilla bean, split in open long ways and scrape out the goodness. You can even add the vanilla bean to the pot…just don’t forget to remove it at the end.

Here are a couple of my OWN suggestions:

  • Place your meatloaf in a large muffin sized pan to create wonderful individual meatloaves. This is great if you are trying to watch your portion sizes.
  • The affogato is just like a chocolate sundae with alcohol. Just remove the alcohol for the kids!
  • Try experimenting with a few other flavors for your OWN affogato creation. Something with a little peppermint or gingerbread around the holiday season sounds fantastic to me!
  • Sounds yummy to me…potato plate would be wonderful chicken and freshly steamed asparagus!
